Menu Challenge Final Presentations
A major component of the HP252 Techniques of Healthy Cooking Lab and Lecture course is for
you to show your ability to understand and apply basic healthy cooking principles to a variety of
dietary challenges. Whether utilizing mainstream dietary principles such as the Mediterranean diet
for general good health, or preparing menus for those stricken with diabetes or heart disease, or
satisfying the guest that wants the opulence of a chocolate cake without all of the fat, sugar and
calories that go along with it.
The Menu Challenge has two parts:
Submission of your game plan for instructor’s approval (around week 4 or 5)
The actual project undertaken, expressed in a writing assignment with research and then the
presentation that you make of that assignment to the class in the culinary arts center during finals
Part 1 The Game plan- What Challenge are you taking on?
Nutrition is Dey to overall general health. Many people suffer from a variety of nutritionally based
health issue:kuch as obesity, diabetes and High Blood Pressure. But nutrition plays a role in a
wide range of health issues. Your task is to identify an area of health you want to focus on. To do
this, we recommend that you visit https:/www.nutrition.gov/nutrition-and-health-issues to see a
comprehensive list of health-related nutritional challenges. Select one.
Once you select the challenge you wish to study, you will begin to think about a “day in the life”
eating plan what should a person afflicted with this health issue eat in a typical day. Then select
three menu items from the following list http://firstwefeast.com/eat/2012/11/the-25-best-chain=
restaurant-dishes-in-america. (we encourage our pastry students to select the dessert items!) Since
these are all QSR or Casual Restaurant offerings, mutritional information is readily available on
their websites you will be shocked at what you discover!
If you fail to submit your gameplan, the instructor will identify a gameplan and the dishes for you
-but that will result in a 20% deduction in your overall grade for the assignment.
